Howard, one thing I noticed when we were doing the aging experiment set  up by McClelland was that some of the jars not put under vacuum initially had developed a bit of vacuum after a period of time.  That suggested to me that there may have been extra gasses given off early that either escaped or were reabsorbed during the continuing changes (probably related to fermentation) in the sealed jars.  I'm sure there are many other conclusions that may be suggested.

That's the way I do it unless I want to keep flakes whole, then I roll
enough flakes to fit the jar tightly and put a second layey on top of
the first. I figure this approximates the packing in tins. I just
screw the lids on and whenever I open a jar the lig is so tight I
almost need a can opener and there seems to be a slight vacume.
